☕️Coffee liquid
Hot water 340g
Instant coffee powder 20g
Coffee wine (Kahlua) 50ml
🧀Mascarpone cheese cream (original and coffee flavor)
Egg yolks 6pcs
Sugar 100g
Mascarpone cheese 250g
Whipping Cream 20g (for coffee flavor cheese cream)
Instant coffee powder 3-6g (for coffee flavor cheese cream)
🧁Cream
Whipping Cream 350ml
Vanilla essence 1 tsp
Ladyfingers 24 pcs
Unsweetened chocolate powder
🍐Method:
➡️Coffee liquid. Dissolve coffee powder with hot water. Add coffee wine (Kahlua) and mix well (add as you like, you can add rum, marsala, amaretto or replace it with water or milk), and let it cool down for later use.
➡️ Mix egg yolk with sugar, bain-marie the yolk sugar mixture to 70 degree Celsius. Keep using hand whisk to whip for 3 minutes. Take off from heat, add Mascarpone cheese and mix well.
➡️ Divide the mascarpone cheese mixture into two portions, set aside. Warm the cream and add instant coffee powder until melted. Mix the melted coffee with one of the portions of mascarpone cheese cream.
➡️ Mix cream(350ml) with vanilla essence, whip it with an electric mixer until medium soft peak. Separate the whipped cream into two portions. Fold them into the Mascarpone cheese cream until well mixed.
➡️ Assemble. Dip the ladyfingers in the coffee liquid for 2-3 seconds and then space them evenly in a container.
➡️ Spread a layer of coffee mascarpone cheese cream
➡️ Line another layer of ladyfingers, then spread a layer of original mascarpone cheese cream
➡️ Sprinkle the unsweetened cocao powder on the cake, done!
